Loaded Sweet Potato Fries


INGREDIENTS Sweet Potato Fries 2 lb. frozen sweet potato fries 1 cup frozen corn 1 cup shredded cheddar cheese (or more!) 1/3 cup black beans, rinsed

Creamy Chipotle Sauce 1/2 cup Greek-style plain yogurt 1/4 cup mayonnaise 1 tablespoon chipotle peppers in adobo sauce 1 garlic clove, peeled 1 teaspoon lime juice 1 teaspoon extra-virgin olive oil 1 teaspoon honey or maple syrup Sea salt and freshly ground black pepper

Toppings 1/2 cup cherry tomatoes, halved 1 avocado, cubed or guacamole 2 tablespoons chopped cilantro Your favorite salsa 1/4 cup sour cream or yogurt Hot sauce or Siracha– optional but tasty!

 

DIRECTIONS 1. Preheat your oven to 425 degrees. 2. Bake the sweet potato fries for 20 minutes, turning halfway. 3. Place the frozen corn on a small baking sheet & roast it in the oven with the fries for 15-20 minutes, or until they are light brown in a few spots. 4. In a food processor, place the yogurt, mayo,chipotle pepper, garlic, lime juice, olive oil, honey, and generous pinches of salt and freshly ground black pepper & blend until smooth. Season to taste with more salt and pepper, if desired. 5. Top the sweet potatoes with corn, cheese and beans. Continue baking until the cheese is melted, about 5 minutes. 6. Remove the nacho fries from the oven and top with some cubed avocados or guacamole, cilantro, lime, salsa and a little chipotle sauce. Serve the remaining sauce on the side.
